Chicken Chili

1 lbs.
Black Beans
10 cups Water
1/4 cup Cottonseed Oil
2 cups Green Bell Peppers, diced
3 cups Onions, diced
2 TBL Garlic, Minced
2 TBL Cumin Seed, Whole
1 lbs. Chicken Breast, 3/8" grind
2 lbs. Chicken dark meat, 3/8" grind
3 TBL  Chili Powder
2 TBL  Kosher Salt
1 TBL  Pepper
1 TBL  Cayenne
1 TBL  Cumin, ground
Tomatoes, 14 oz. can "chop"

Cooking Directions

Step 1 – Soak beans overnight in 10 cups of water.  Then simmer for 1 hour in soaking liquid. Drain beans and hold both bean and the liquid to the side for later. 

Step 2 – In large sauce pan, add in cottonseed oil, peppers, onions, garlic and cumin seed. Sauté for 5-7 minutes or until peppers and onions start to sweat. Add chicken, mix well and cook until browned. About 15 minutes.

Step 3 – Add spices and tomatoes. Bring to a boil, reduce heat, and simmer for 1 hour.  Add cooked black beans and remaining drained water and simmer for 20 more minutes.

Season with Salt if needed…
